Pok Choy Soup, modified from masalaherb.com
Ingredients:
5 pok choy leaves washed and sliced
2 spring onions, whites sliced separate from greens
1 tablespoon avocado oil
1 tablespoon garlic, minced
1 tablespoon grated ginger
1 bay leaf
1/4 teaspoon ground, cinnamon
5 cups vegetable broth, or chicken stock
1 Tablespoon soy sauce
1 Tablespoon rice vinegar
1/8 cup lime juice
To garnish sesame seeds
Directions:

1. Heat up a pan with the avocado oil and fry your green onion bulbs until tender.
2. Take from the heat and add the ginger and garlic.
3. Return to the heat and add the pok choy to the pan, stir cook for a minute until translucent. Add the bay leaf and cinnamon stick, pouring stock in the pan. Combine soy sauce and rice vinegar bring everything to a boil and cook for 10-15 minutes, stirring often.
4. Take the pan from the heat and add lime juice into the mixture and stir.Pick out the bay leaf and discard.Serve soup with garnish of greens from onions stalk and sesame seeds.Enjoy!
